  • 2 medium beets, roasted and peeled
  • fine salt and freshly ground black pepper
  • ½ hard-cooked egg, sieved
  • 1 green stalk from a green onion, thinly sliced on the bias
  • 1 tablespoon olive oil
  • ½ tablespoons balsamic vinegar

    Very thinly slice the beets and arrange in a rosette pattern on individual, chilled serving plates. Season lightly with salt and pepper.
