  • 1 tablespoon stong dijon-style mustard

  • 1 teaspoon finely minced fresh thyme
  • 100 ml heavy cream

    After cooking steaks, remove cooked meat from the frying pan and discard any grease. Deglaze the pan with the vermouth. Reduce slightly.

    Add the cream, bring to a boil, reduce heat, and simmer until the cream is thick and reduced by about half. Mix in the mustard. Season with salt and pepper. Stir in the thyme.
