  • 1 teaspoon yeast
  • 120 g sugar (caster)
  • 250 g flour
  • 500 g cherries, fresh
  • 250 ml milk

    Beat the eggs and sugar together, slowly add the flour then the yeast, mix well. Add enough milk to make a batter about the same consistency as a pancake batter (not too thin).Leave batter to sit for 15 minutes.Remove stems and stones from cherries.Butter a flan dish and pour in the batter. Arrange the cherries on top.Bake in a hot oven 190°C for about 35 minutes until golden brown.Dust with sugar and serve hot or cold with cream and
