  • 1 tablespoon soft butter
  • 100 g yellow onion, shredded
  • 80 g smoked bacon, cut into 3/32" strips
  • 300 g cauliflower, cut into 1" florets
  • 100 g saint-marcellin cheese, cut into thin slices

    Preheat oven to 410ºF.

    Sweat the onions, along with the bacon, in a small frying pan over medium heat. Season with salt and pepper.

    Bring a saucepan of salted water to a boil and cook the cauliflower until barely tender, about 3 minutes. Drain well and gently combine with the butter.

    Combine the cauliflower pieces and onion-bacon mixture. Arrange in individual au gratin dishes. Lay the cheese slices on top of the mixture. Sprinkle the thyme leaves over the cheese. Bake the mixture until the cheese is melted and the edges are brown, about 20 minutes.
