Who says sophisticated hors d'oeuvres have to be complicated? This pate takes about 15 minutes to prepare, yet has the flavor of centuries of Old World tradition. Can be made several days ahead of time.

Recipe's Ingredients

  • 1 garlic clove, minced
  • thyme
  • marjoram
  • sage
  • 1 teaspoon salt
  • ½ teaspoons ground black pepper
  • 3 tablespoons brandy (or bourbon)
  • 450 g chicken liver
  • 120 g butter
  • 250 g chopped onion
  • 130 ml heavy cream
  • Recipe preparation steps

    Cook onion and garlic in 1 tablespoon of the butter until soft.
  • 2
    Add chicken livers, herbs, salt and pepper and cook until livers are pink inside.
  • 3
    Add brandy, cream and the rest of the butter; purée until smooth in a food processor.
  • 4
    Transfer to a terrine, cover and chill.
  • 5
    Serve with crostini and crackers.
