3Melt the remaining butter in a frying pan. Slice the remaining apples and fry them for 3 mins on each side. Remove from the pan and keep hot.

4Fry the prepared herrings in the same frying pan for 4 to 5 mins on each side. Drain the cooked herrings and place on the cider mixture on the serving plate.

1Combine the sauce ingredients (yogurt, honey, lemon juice, ginger, and mustar) and place in a small bowl suitable for dipping. Set aside.

2Place the chicken breast between a couple sheets of plastic wrap and pound lightly so the thickness is about 0.5". Remove the breast from the plastic and cut into diamond shapes of about 1" on each side. Place on a plate in a single layer and season with salt and pepper. Flip each piece over and season the second side.

4While the chicken is cooking, halve and core the apple. Trim the ends from the apple halves so they are parallel. Slice the halves, crosswise, into 0.5" thick slices. Cut the larger slices into two or three pieces so they are about the same size as the chicken pieces. There should be one apple piece for each chicken piece.

3Remove the vanilla bean from the milk, whisk in chopped white chocolate, and then whisk in the beaten eggs. Divide the mixture among ramekins. Place ramekins in a bain-marie and bake for 35 minutes.

4Remove from oven and to cool slightly. Top each ramekin with 2 teaspoons of brown sugar and caramelize sugar under a broiler or with a torch. Set aside to cool.

5Just before serving, top each ramekin with shaved white chocolate.
