Originating from Melbourne, Tobie opened a restaurant here before spending two and a half years working with Jamie at Fifteen London. He’s now brought his experience and expertise back home and leads our kitchen with his team of world class professional chefs. Producing dishes of the highest quality, they inspire and guide 20 young apprentices each year.
