Dear Olivier, I read a recent article in a food magazine where you descibed how much you enjoyed the tasty burrittos in Cancun. I am hopefully opening a buritto bar in Belfast, Northern Ireland and i would be most grateful if you could share any tips you picked up in Cancun that so impressed a chef of your standing. I am going to be very cheeky and also ask would you have any ideas of what is the best recipe when considering making burritos . Many thanks and if I never hear from you be careful on that motorbike!
