hef Deshaies directs and manages Citronelle's menu and food preparation, as well as budgeting, purchasing, private dining and all kitchen operations of the restaurant. Chef Deshaies has achieved national and international acclaim, including winning the Best Fish Course at the Food and Fun Festival in Iceland, Feb. 2005, and organizing all aspects of the DC Rising Star Chefs Tsunami Benefit , raising over $8,000 for Tsunami victims. Chef Deshaies has prepared and presented for 400 people at the holiday auction for the James Beard Foundation in Nov. 2005. Chef Deshaies has worked for several acclaimed restaurants, such as, Michel Richard's Citronelle, La Cote Saint Jacques (a 3 Michelin Stars restaurant in France), Restaurant Ses Jacques (a 1 Michelin Star restaurant in Spain) and Restaurant Pralong (a 4 Star International Relais & Chateaux Guide in France).
