Executive Chef Amar Santana worked as sous chef of Aureole New York before Charlie Palmer selected him to take over the kitchen in Costa Mesa. A native of the Dominican Republic, Santana entered Careers through Culinary Arts Program competition and won a trip to London's prestigious Le Cordon Bleu where he trained with some of the world's most talented rising star chefs.
