Blu di Bufala, a semi-firm aged buffalo milk blue, is from Bergamo, Italy. It is available in a 9-pound square. Nocetto di Capra is a 500-gram soft-ripened goat cheese from Lombardy produced with milk from Orobica goats. Mitica Provolone Mandarino Riserva is aged for 14 months.
