Forever Cheese, Long Island City, N.Y., offers several new products. Cacio Fiore is a raw sheep’s milk cheese from Italy produced with thistle flower. 14-ounce square cheese with a white mold rind is semi firm, full flavored, slightly tart and floral VerdeCapra is a goat’s milk blue cheese that is both creamy and tangy. Blu di Bufala, a semi-firm aged buffalo milk blue, is from Bergamo, Italy. It is available in a 9-pound square. Nocetto di Capra is a 500-gram soft-ripened goat cheese from Lombardy produced with milk from Orobica goats. Mitica Provolone Mandarino Riserva is aged for 14 months.
Also available from Forever Cheese are new Mitica Italian Honeys. The line of raw honeys from Bologna include Cherry, Lavender, Erica, Rhododendron and Sunflower. All are in a 4-ounce jars. Panforte Mitica is an artisanal Panforte from Siena in an 11-pound wheel.
