Eversfield is one of the few organic farms where every single process takes place onsite making our organic meat totally organic and completely traceable. We breed, raise and butcher our own meat, even the packaging and delivery is handled right here on the farm. In fact, the only thing we don´t do ourselves is slaughter our own livestock but to keep the process as humane as possible and minimise transportation, we use specialist local organic abbatoirs. How it all began
Eversfield Organic is an 850 acre organic farm nestling deep in the heart of the Devon countryside on the edge of Dartmoor. Eversfield´s owner Mark Bury (pictured) held a lifelong ambition to own a small estate in the heart of the country. Whilst many considered him to be mad, he felt so strongly about farming in an environmentally friendly way that he decided to ‘buck the trend’ in 2000 and invested in Eversfield, thus realising his dream.
Mark purchased Eversfield Manor with a modest 200 acres and began to put his dream into effect. However, his early progress was hit hard by the 2001 foot & mouth outbreak which saw the imposed slaughter of his small flock of sheep.
Undeterred, Mark acquired the nearby Ellacott Barton farmland bringing the estate up to 850 acres. At that time the Ellacott land was in poor heart having been run as a grass fodder business for many years. The land had been intensively farmed using heavy chemicals and pesticides leaving the soil in need of rest, recuperation and regeneration with little goodness left for grazing livestock. Areas of woodland and the species rich ‘Culm grasslands and lowland hay meadow had long been neglected. Similarly, the hedgerows had been stripped out to maximise the acreage for grass growing and many natural nabitats had disappeared.
Mark had his blueprint for the newly expanded estate and set about creating a model organic farm from scratch, complete with plans for a state of the art fully EU licensed cutting plant. This ensured that ´Eversfield quality´ was maintained throughout the process; from farming his organic livestock through to hanging the meat onsite to develop the flavour, then the all important skilled butchery and finally the packaging and shipping of the customer orders.
Under the aegis of the Countryside Stewardship Scheme (read our blog for details) Mark and his team began work on a long term program to restore the traditional Devon landscape. The old orchards that are an important feature of all Devon farms have been replanted. Miles of hedgerow have been re-established; the woods have been cleared of their scrubby undergrowth; 30,000 new trees have been planted, and the Culm grasslands and lowland hay meadows have been returned to their natural state, maintained with a strict grazing regime. Gradually, the old, depleted rye grass pastures have been ploughed in – with a little help from the Eversfield pigs! - and reseeded with traditional herb rich leys. Full organic status from the Soil Association was achieved in 2004.
Our Organic Meat: Organic farming works best when original, native breeds of livestock are kept. Mark Bury and his farm manager selected the best livestock breeds which when combined with traditional organic farming methods produces the very best quality meat.
Eversfield Cattle: Eversfield has a unique herd of ‘Heritage’ Aberdeen Angus. These are wonderfully stocky, hardy cows that thrive on the species rich rough grazing of the ‘Culm’ grasslands, producing dark, deeply marbled meat with supreme flavour. As the only estate in the world with the near extinct ‘Presteign’ bloodline of traditional native Aberdeen Angus, we have an active breeding programme to make sure that this important line is saved for posterity. We breed all our cattle on the farm, the 2008 herd totalling approximately 400 pure Aberdeen Angus with the traditional Native pedigree representing around 25% of that figure. Eversfield Sheep: Eversfield organic lamb is born and reared on our farm from a flock of mixed sheep comprising Romney Marsh (the same breed used for New Zealand lamb) and Suffolk cross Mules. This type of sheep is ideally suited to forage the lowland meadows and culm grassland of the Estate and live outdoors year round only coming inside for lambing. We have around 400 ewes which each year produce between 500 and 600 lambs each spring. Eversfield Pigs: In March 2007 Mark Bury rescued a group of pigs from a local farmer who was giving up on pig farming. The pigs were destined for slaughter until Mark took the characteristic ´brave´ step of taking on pig farming at a time when many were leaving pig production due to the high costs of feed and relatively low returns.
Over a year later, the pig herd is well and truly established with a breeding group of Sows and one very happy albeit busy Boar! The pigs are a mixture of Large White and Medam sows with Large Black sows all renowned for producing quality pork. Our pigs live outdoors in large fenced of meadows, allowed to forage naturally and root about for grubs and plants. We supplement their diet with organic feed and they have large pig arc shelters to protect them from the sun, wind and rain. Several litters of Eversfield piglets have been born since the original group arrived and the farm now has a regular supply of superb Award Winning organic pork, bacon, sausages and joints, all carefully prepared by our butchers and packed on-site. Eversfield Poultry: Eversfield has a small brood of hens who happily produce organic eggs for our Bed & Breakfast guests. However, we currently don´t produce our own organic poultry. We recognise that superior quality organic poultry comes from specialist producers and we are proud to work with a small number of neighbouring organic farmers who supply us with delicious organic chicken. Our skilled butchers can prepare chicken to order as whole roasting chickens, chicken drumsticks, chicken breast or diced for casserole.
Non Organic Wild Venison & Wild Game: During the game season, our gamekeeper manages several small herds of wild Red deer and Roe deer to ensure conservation standards. We also run a successful commercial pheasant shoot on the Eversfield Estate. This means that our butchers are able to supply wild venison and pheasant subject to availability in the winter months. The wild deer make their home on our organic Eversfield Estate grazing in our meadows and woodland, but since we don´t control their diet we cannot describe the meat as organic venison.
Eversfield Christmas Organic Goose & Organic Turkey: Our Organic Christmas Produce is available from September each year and as well as our own home produced delicious Eversfield Organic Beef, Lamb & Pork customers can enjoy Organic Goose and Organic Turkey from our personally selected organic producers in the South West and Norfolk. During the Christmas period, customers can chose from our complete range of organic meat or select from our Christmas Hampers.
The estate is a haven for wildlife of all sorts. Maintaining this natural balance helps to keep pests and diseases away from the farm. Eversfield Manor is certified by the Soil Association. To achieve and maintain our organic status we follow their very strict organic standards and are subject to rigorous annual inspection. This ensures the highest level of animal welfare and guarantees the absence of infeed antibiotics, artificial pesticides, herbicides and genetically modified produce in your food.
