he recipe of Carmarthen Ham has been handed down from generation to generation. The family legend being that when the Romans came to Britain and settled in Carmarthen, they stole the recipe and returned to Italy and called it Parma Ham!
All the hams are cured by Chris & Ann Rees at their home And they intend to stay as a cottage industry and keep it a premium product.
Carmarthen Ham is dry salt cured then air-dried, sold whole, boneless, Or sliced thinly and vacuum-packed in 100g or 200g packets with a shelf life of 6 months.
This product is used in many hotels and restaurants throughout Wales And with many chefs in television e.g. Ena on Heno, Angela Grey - Hot Stuff, Dudley in S4C. It was featured in Rick Steins recent series -Food Heroes as well as with Sara Edwards - Counties of Wales and Dai Jones in Cefn Gwlad. In recent years it has been used in the British Embassy in Paris fro the Queens` official birthday, as well as in many Royal Garden Parties throughout Britain.
The highlight of recent times was at the Great Taste Awards in Olympia 2003,Carmarthen Ham was awarded Gold in the air-dried category and the Best welsh Speciality. It was a finalist in the True Taste of Wales competition
A brief history of Albert Rees
Albert Rees was set up in 1962 by Albert & Brenda Rees, who were following the family tradition of bacon curers that has been market traders in West Wales since the late 1800's.
In 1989 Chris & Ann Rees took over the business on the retirement of Chris's parents, and we still trade in many markets, the main shop being in Carmarthen Market.
The specialities of the business are dry salt cured hams and bacon, but also an extensive range of home-made sausages, faggots and home cooked meats.
Carmarthen Ham Carmarthen hams are cured in the traditional Welsh farmhouse way under controlled temperature conditions and then air dried to mature. Sliced very thinly and pre-packed for convenience - it can be served in many ways, the most popular being as a starter with melon.
